For the 2013 RCA Professional Culinology® Competition, an ACF sanctioned culinary competition, professional teams consisting of one (1) RCA member and one (1) ACF member will compete for a $5,000 first place award by developing a written proposal for a North Carolina regional cuisine concept featuring 1 appetizer, for fine dining, 1 shareable appetizer for casual dining and 1 fine dining OR casual dining dessert. Both gold standard kitchen recipes and their corresponding commercialized production formulations were be provided. Finalists will commercialize and ship their product to the competition site in Charlotte, NC. On the day of the competition, March 8, 2013, finalists will create the fresh product version of their concept and will be judged in part against how well the plated, commercialized concept matches up against the gold standard.
As an ACF sanctioned culinary competition, finalists compete not only for a $5,000 first place award, but also for ACF competition medals.
